Love fried rice but hate all the carbs?! Because we sure do. Using shredded cauliflower is a great substitute for rice (especially white rice). Definitely try cauliflower fried rice!!!
Cauliflower rice is honestly so easy to make. All you have to do is buy a head of cauliflower. Cut the florets off of it and put into a food processor. Pulse until cauliflower is finely chopped and looks like rice. Remove any pieces that haven’t been broken down entirely, once the rest is chopped you can remove them from food processor and replace with larger pieces. Then reprocess these pieces.
For the fried rice, we did our own concoction of ingredients – chicken, carrots, tomatoes, eggs, green beans, and onions. It was definitely interesting…I would advise following Rachel Schults’s Fried Rice Recipe and then just replace the rice with the cauliflower rice :).
